Salted Caramel Brownies

If you don’t think brownies can be taken to the next level, try these. They are so crazy delicious!

Recipe for Salted Caramel Brownies:

Yield :  Prepare a 9X9 Pan Buttered and lined with Parchment
Bake Time:  350F for 45-55 minutes
Prep Time: 1 hour
 
Ingredients:
 
Brownie Batter:
11/4c. All Purpose Flour
1 tsp Salt
2 Tbsp Cocoa Powder
11oz Dark Chocolate 60%
1 c. Butter, Unsalted
11/2 c. Granulated Sugar
1/2 c. Light Brown Sugar
5ea. Eggs Duck or Chicken( I used for the recipe duck eggs)
2 tsp Vanilla Extract
 
Caramel:
1 c. Granulated Sugar
2Tbsp Corn Syrup
1/2c. Heavy Cream
1 tsp Salt
1/4 c. Sourcream
 
 
 

Ready, Set , and GO…

Mise en Place: 9X9 pan greased and lined with parchment.

Making the Caramel:

1.)Warm the heavy cream in a small pot. In another pot put the corn syrup and granulated sugar stirring often and cook until 350F or golden in color. Make sure you use a large enough pot to avoid splashing when you pour the cream into the caramel. It will splatter please be very careful! Once the caramel is 350F slowly pour the cream in. Very slowly!

2.)Take off the heat and add the sour creme and salt. Set aside to use for the filling for the brownies and a sauce for the finished brownies. Let cool. :)

Making the Brownie Batter:

1.)In a double boiler melt the chocolate and the unsalted butter.Take off the heat when melted 85% of the way. It will continue to melt the rest of the way.

2.)Add the eggs and the vanilla. Do not over mix! please.

3.)Add the granulated sugar and the brown sugar.

4.)Fold in the sifted cocoa powder, all-purpose flour, and then the salt. Mix in two increments and mix until combined.

5.)Rats! So sorry I forgot to take a picture of this step. No one is perfect.

Pour 1/2 the brownie batter into your pan then drizzle 1/2 the caramel sauce staying 1/2″ from the sides. If the caramel touches the sides of the pan the caramel will get really crunchy. With the brownie mix I create a wall to keep the caramel inside the pan then fill in the center.

6.)Bake at 350F for 45-55 minutes until a skewer comes out clean. Sprinkle coarse salt on top as soon as it comes out of the oven.

Cut into squares 2X2 once it is cool.

Rich salted Caramel in the center surrounded by chocolate brownie. You can’t get anymore decadent then this.
