I was craving something sweet. I decided to do something that I could make in a large batch. When my sweet tooth acts up – I’ll be ready! This recipe is perfect for fruit that is a little too ripe. You can use almost any kind of fruit. It’s a healthy snack for Mom and Dad ,and yes, the kiddos. You can use fresh, frozen, overripe, and canned fruit to make these fruit roll-ups. They are pure and natural with no preservatives or colors.
I went to the grocery store and strawberries were on sale, so I decide to make strawberry fruit roll-ups. I know it’s not the season, but I was craving something with strawberries.
Recipe for Fruit Roll-ups:
Prep Time: 30 minutes + 10 hours drying time
Bake: 170F 10 hours +
2 cups Fruit, I used strawberries
1/4 cup Water
1 Tbsp Lemon Juice
1-4 Tbsp sweetener to Taste: sugar, honey, agave, etc.
This recipe does not have to be exact, it is up to what you like. Cater it to your taste buds.
For a 13X18 pan use no more than 2-3 cups of fruit
1.) Prepare your fruit: wash and cut the fruit
2.)In your pot combine sweetener, fruit, and ground spices etc. If your fruit is naturally sweet you may not need to add any sugar at all. If you are doing an apple fruit roll-up you may want to add cinnamon. Be creative. Let me know your variations in my comments please. :) The lemon juice helps brighten the flavors of the fruit. If you want this version to be raw or in a hurry you do not have to cook most fruits so just skip this step. Taste and Taste!!
3.)Cook for 5 minutes until fruit becomes tender.
4.)Process the fruit with an immersion blender, or blender until smooth.
5.)Prepare your pan: brush the sheet tray with oil. Lay down the plastic wrap, then brush with a thin layer of oil. The plastic wrap will not melt due to the low temperature. Dry out at 140 -160F for 5 hours then flip and dry for another 5 hours on that side. Or you can always leave this outside to dry in the sun for a couple days. Since the drying time is long you may want to do different fruit roll-ups so you can maximize the space in the oven. You may want to check the temperature of your oven to make sure that it reads the proper temperature. If the temperature is too high it will get crispy.
6.)Let the fruit roll-up cool then trim the edges with a scissors and cut to 2″ wide strips.
7.)Roll with parchment between it they keep unrolling just put a small piece of tape to seal the edge.
Keep the fruit roll-ups in an air tight container. If stored properly these can keep for several weeks but they usually do not last long in my house. You can also freeze them.
