Got Stood up! But I made it anyways.

They would have loved it! Eric Ripert and Anthony Bourdain I made this for you guys. :) I know your plans changed last-minute but this was delicious! Hope you enjoyed your stay in Boulder, Colorado. The theme for this dessert is Good the other dessert I did was evil because the talk was Good vs Evil. For me this plated dessert is too organized. I like it to be abstract. The evil dessert was a little wild and crazy.

When coming up with a plated dessert I always like to sketch the design I am thinking. I rather do it in pencil but I have none. Looks like I need to buy some colored pencils and pencils.  I was not sure what to make, I must have changed my mind like 20 times.  But I finally decided when I was taking a bath at my retreat all paid by Whole Foods. I was going to do a version of a black forest cake and the chocolate component was going to be in the evil dessert. Both desserts were going to be on the same plate a lot smaller version then you see here.

 Wish I had a little color in my life.




Marzipan Cake with Creme Fraiche Ice Cream, Kirsch Cherries, Kirsch Cherry Sauce, and Honey Nutmeg Tuille

I ended up making the dessert for one of my best friends and he just loved it.

The only thing I would change is that I would baked the marzipan cake in a round pan but all my baking toys are in Pennsylvania. Need to take a road trip. Who wants to join?


This is how I made the tulle. 

Cut the template out of cardboard with scissors then spread the tuille batter with a small offset.


Spread the batter as thin as possible then lift up the stencil.


Bake at 350 for 5 minutes until light golden brown.
