Cacao Nib Shortbread

What is cacao nibs? Cacao beans are roasted, hulled and then they are called cacao nibs. Cacao nibs are then combined with sugar, vanilla, and lecithin and conched for over 24 hours to turn into a smooth chocolate bar.  Cacao nibs are the more common form of raw chocolate you can find in gourmet grocery stores. This is a healthy version of chocolate shortbread but there is still lots of butter and sugar! But it is all about moderation and keeping yourself healthy.

1.)Combine all ingredients but the cacao gigs in the mixer with the paddle attachment.

2.)Cream just until smooth.

3.)Add the cacao nibs.

4.)Roll into 2 logs.

5.)Refrigerate over night or at least 3 hours.

6.)Pull out of the refrigerator and let sit for 10 minutes to soften. Cut 1/2″ pieces and put onto a baking sheet with about 1/2″ space in between each cookie. Bake 350F for 18-20 minutes.
